This is a classic Southern Italian side dish which goes well with meat or fish. A quick fix when you want to get some healthy greens included in your meal. You can do the same with thinly sliced eggplant, carrots and beetroot.
What you need-
Putting it together-
Wash the zucchini and slice it into thin round discs.
Heat a griddle pan (this is my favourite one), add a tbsp. of olive oil and grill the sliced zucchini till you have lightly charred marks.
Sprinkle salt, pepper and chili flakes.
In a platter, place the zucchini and garnish with fresh mint leaves and a drizzle of extra virgin olive oil.
