Grilled Zucchini Chips


This is a classic Southern Italian side dish which goes well with meat or fish. A quick fix when you want to get some healthy greens included in your meal. You can do the same with thinly sliced eggplant, carrots and beetroot.

  1. Wash the zucchini and slice it into thin round discs.

  2. Heat a griddle pan (this is my favourite one), add a tbsp. of olive oil and grill the sliced zucchini till you have lightly charred marks.

  3. Sprinkle salt, pepper and chili flakes.

  4. In a platter, place the zucchini and garnish with fresh mint leaves and a drizzle of extra virgin olive oil.
