Grilled Zucchini Chips

This is a classic Southern Italian side dish which goes well with meat or fish. A quick fix when you want to get some healthy greens included in your meal. You can do the same with thinly sliced eggplant, carrots and beetroot.

 

What you need-

  • 1 medium sized zucchini

  • Handful fresh mint leaves

  • Extra Virgin Olive

  • Oil

  • Salt & pepper to taste

  • Chili flakes (optional)

Putting it together-

  1. Wash the zucchini and slice it into thin round discs.

  2. Heat a griddle pan, add a tbsp. of olive oil and grill the sliced zucchini till you have lightly charred marks.

  3. Sprinkle salt, pepper and chili flakes.

  4. In a platter, place the zucchini and garnish with fresh mint leaves and a drizzle of extra virgin olive oil.
