This is an amazing accompaniment to any wrap, sandwich or just serve with some chips. I recommend my Spiced Pita Chips which pairs really well. All you need is a strong margarita!
What you need-
1 small onion, finely chopped
2 mangoes, diced
1/2 cup fresh cilantro (coriander)
2 jalapenos, de-seeded and finely diced
Salt (I use Himalayan salt)
Freshly cracked pepper (available here)
1 small red chilly or chilly flakes
Putting it all together-
1. Combine all the above ingredients. Season well with salt and lime. The flavour should be strong so add more if needed.
2. Set aside for at least half an hour for all the flavours to blend in together.
