Spinach and Ricotta is a classic Italian combination used in several dishes. Ricotta is the same as Indian homemade paneer (chena). If you can't find it in the store simple make it at home.
Homemade Ricotta/Cottage Cheese
Boil a litre of milk. Once it comes to the boil, squeeze in the juice of a lime or lemon till the milk separates into solids and liquid. Pass through a sieve and collect the solid cheese bits. Mince with the back of a fork to get a smooth consistency. That is your homemade ricotta- way healthier than store bought.
This lovely green dip makes a great sandwich spread or pasta sauce. Toss it with some cooked barley or quinoa for a healthy green and cheesy risotto.
