This is a simple quick dish which is full of flavor. Salmon works very well but any other white firm fish will do. The burnt orange adds an amazing new dimension to the usual soy flavor. You can also omit the orange completely and just make a classic teriyaki fish.
Pair it with anything else you like as per your convenience and mood. In this picture I have served it with brown rice and lettuce salad. This is great if you want to add tasty protein to a simple salad. Alternatively, any quick fried rice, noodles or simple steamed rice will do.
Fish cooks really quickly so be careful not to overcook it! A couple of minutes on each side is enough for a firm texture.
What you need-
4 tbsp soy sauce or more
1 tbsp honey
2 tbsp orange juice or more
2 fish fillets (Seabass, Salmon or any firm fish)
1 tsp ginger
5-6 fresh orange slices or wedges
Salt and pepper
Any type of oil for cooking
2 tsp sesame seeds
Spring onions, sliced for garnish.
Putting it together-
Make the marinade by combining the soy sauce, orange juice and honey in a bowl.
Clean the fish and rub with oil on all sides. Season well with salt and pepper on both sides. Rub the ginger over. You may use less if you like.
Pour the marinade over and leave to rest for half an hour to one hour.
Heat a frying pan and add a bit of oil.
Once the pan is very hot, place the fish fillets, skin side down and pour the rest of the marinade over. Cook on one side then flip over. Add the orange slices around the pan and on the fish.
The sauce will gradually reduce and the coat the fish. Add a dash of orange juice to deglaze the pan and scrape off the sticky bit from the pan. This is all the tasty bits.
If you would like more gravy, add more soy sauce, honey or orange juice to taste.
